Raised in the Mediterranean, Kosta Ganotis was brought up with a respect for ingredients which is carried through to his cuisine – from garden to plate.

With a restaurant background spanning almost 20 years, Kosta has experience in a wide range of restaurants from the famous La Boullabaisse in the early ’80s, to five-star properties in Melbourne including the Regent Hotel and Eden on the Yarra.

Before joining Crown, Kosta owned and managed outlets in Melbourne over a period of eight years including Robert Timms espresso & patisserie, Spossabella, Bar e Cucina as well as the Agora Café bar chain.

At Crown Kosta has made his mark; as Chef de Cuisine at Margos, opening The Pub at Crown, and then as Chef de Cuisine at Conservatory – one of Melbourne’s best loved buffet restaurants.

Until recently Kosta headed up the kitchens at JJ’s Bar & grill and was also responsible for the busy Room Service offering at Crown Towers Hotel.

Now promoted to executive Sous chef Kosta strives to maintain his strict adherence to quality service & standards across the Crown Restaurants.
