A third generation restaurateur with over four decades of culinary experience, Staib began his career in Europe in 1960. He received formal training in many of Europe’s finest hotels and restaurants before coming to the United States.
As founder and President of Concepts By Staib, Ltd. (est. 1989), a globally recognized restaurant management and hospitality consulting firm, Walter Staib is currently the driving force behind one of the nation’s most unique dining establishments: Philadelphia’s City Tavern (independent), a faithful recreation of an original 18th century tavern and Concepts By Staib, Ltd.’s flagship operation.
In 1999, Chef Staib penned the City Tavern Cookbook, a chronicle of 18th century American culinary history and the 18th Century gourmet recipes that are served at City Tavern. A sequel Cookbook, the City Tavern Baking and Dessert Cookbook, was published in October 2003.
Walter Staib makes regular appearances on numerous local and national cooking shows, such as The Food Network’s “Cooking Live with Sara Moulton,” and “Keith Famie’s Adventures,” CN8’s “Let’s Cook with Paul Dillon” and CBS’ “Chef on a Shoestring.” He has also just finished taping a series of cooking shows titled “Cooking with History™,” which airs on CN8 in conjunction with “In the Fretz Kitchen.”
In 1996, was also appointed the First Culinary Ambassador to the City of Philadelphia. Among Walter Staib’s awards are Restaurants & Institutions 1999 Restaurateur of Distinction Ivy Award, the Philadelphia Delaware Valley Restaurant Association’s 1999 Restaurateur of the Year Award and the 2001, 2002, 2003 & 2004 American Academy of Hospitality Sciences’ Five Star Diamond Chef and Restaurant Awards.
